Pancakes
Ingredients
- 1 cup (225g) rice flour
- 1/2 cup (100g) soy flour
- 1/2 cup (100g) cornmeal (organic if possible)
- 1 Tbsp (15g) baking powder
- 1/4 tsp (1g) sea salt
- 1 egg (organic if possible)
- 1 1/2 (360mL) cups water
- 2 Tbsp (30mL) extra virgin olive oil or flax oil (optional)
Directions
Combine all dry ingredients in a bowl. In another bowl, stir together all liquid ingredients and add to dry ingredients. Drop by large spoonfuls onto a hot griddle or frying pan that has been sprayed with non-fat cooking spray. Turn only once. Serve with honey, berries or organic fruit preserves.
Makes 12 pancakes, about 4 servings.
