Old Fashioned Macaroni Salad
A favorite for picnics, this salad is a wonderful combination of tastes and textures. Serve as an entree or as a side dish.
Ingredients
- 2 cups (150g) organic (whole grain) macaroni, uncooked
- 1 cup (150g) celery, chopped
- 1 cup (150g) red bell pepper, chopped
- 1/2 cup (90g) red onion, chopped
- 1/2 cup (75g) cucumber, cubed (optional)
- 6 1/2 ounces (185g) tuna in water, canned, drained
- 1/2 cup (115g) light sour cream
- 1/4 cup (60g) soy mayonnaise
- 1 clove garlic, minced
- 2 tsp (10mL) lemon juice, fresh
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) black pepper
Directions
Cook macaroni in a large pot of rapidly boiling water until done. Rinse with cold water and drain. In a large bowl, gently mix macaroni, celery, red pepper, red onion, cucumber and tuna together.
In a medium bowl, mix sour cream, soy mayonnaise, garlic, lemon juice,
sea salt and pepper. Add soy mayonnaise mixture to macaroni mixture and
toss together.
Refrigerate until serving time.
